Renault 21 (1998) overheating?

Renault 21 GTS - fabrication 1988

Engine: gasoline 1721 cc, 69 kw (94 hp)

Problem: Overheating

After overheating it will not start until cooling down a bit.

The temperature gauge behaves very strange. It gets to 90 and then, randomly, suddenly gets to 95-98 stays there for about half a second and than back to 90.

If I get the engine at about 3000 RPM (or more) and then release it, the RPM gets at about 700, the engine almost stops, and than back to 1000 RPM (the idle running). Some times the engine stops.

I've changed the thermostat various times but the same result.

I've changed the temperature sensor on the radiator various times but it keeps starting the fan too late, when the water is almost boiling.

There are also new spark plugs and new spark plug coil.

Does anyone have any idea how to fix that?Renault 21 (1998) overheating? water pump replacement, is this in Fahrenheit 90
